This years Festival Internacional Mojo Isleño (International Mojo Isleño Festival) takes place July 19 – 21, 2019 at Paseo Ladi, Salinas.
During the three day festival the town of Salinas celebrates their famous Mojo Isleño; a succulent sauce made with slow-cooked tomatoes, onions, bell peppers, garlic, and olives, that is served over fresh succulent seafood dishes.
The festival is a fun event for all the family with artisans, sailing competitions, live music and great local foods from a host of restaurants in Salinas. In addition the local chefs join forces to create the world’s largest mojo isleño.

The Origins of the Mojo Isleño
The original Mojo Isleño is said to have been created by Eladia “Ladi” Correa the owner of Ladi’s Place in 1938. The original recipe being based on one from the Spanish Canary Islands, which she modified with local ingredients. Served over freshly caught fish and seafood the Mojo Isleño quickly became a staple for the town of Salinas.
Today you will find variations of the Mojo Isleño at restaurants in Salinas, but the basic ingredients and techniques all hark back to Eladia’s original recipe.
Don’t worry if you can not make the annual festival, as Salinas typically hosts a Mojo Culinary Fest on the first Friday of every month. You can also enjoy the Mojo Isleño all year round by visiting one of the many restaurants on the Salinas Ruta Gastronomica that serves the sauce.
