Popular in Puerto Rico, Ham Croquettes make for a great appetizer or snack, so why not make some right now
Ingredients:
- 4 TBSP Butter @ room temperature
- 2 TBSP Onion finely chopped
- 1 Cup Milk
- 1/3 Cup Flour
- 1lb Ham, Very finely diced
- 1 Cup Bread Crumbs
- Vegetable oil (enough to cover the croquettes when fying)
- Flour for dredging

Instructions:
- Melt the butter in a frying pan and add the onion and cook on medium-low heat for about 5 mins.
- Slowly add the milk, 1/3 cup of flour and stir constantly until it forms a thick sauce like consistency.
- Add ham and mix until it is incorporated with the sauce. Let it continue to cook for about 5 minutes on a low heat.
- Remove from the heat and allow it to cool to room temperature. Transfer to a dish, cover with cling film and place in the refrigerator for around 2 hours, This will make it easier to form the croquettes for frying
- Remove the ham mixture from the refrigerator
- Take approximately 1 tablespoon and form a log or ball, your preference.
- Repeat until you have used up all of the mixture
- Beat the eggs in one bowl and set aside, add the breadcrumbs to a second bowl and the flour to a third bowl
- Take the formed ham mixture and dip in the egg and then the breadcrumbs and place on baking sheet. Repeat for all the croquettes
- Heat oil in a pan (enough to cover the croquettes) to a temperature of 375F
- Fry croquettes in small batches (so that the oil temperature does not drop too low) until golden brown, about 4 minutes.
- Once cooked, drain on kitchen paper, allow to cool a little and enjoy
