Corned Beef With A Touch of Puerto Rico

Puerto Rican Corned Beef RecipeA tin of corned beer might not be the first thing that comes to mind when you are looking for a quick and tasty meal. But the addition of a few Puerto Rican touches turns a simple can into an inexpensive, delicious and hearty corned beef dish in under 30 minutes. What’s not to like about that.

Ingredients:

  • 1 Can Corned Beef
  • 1 Medium Potato Cubed
  • 1 Small Onion, Finely Diced
  • 2 Cloves of Garlic
  • 1/2 tsp. Oil
  • 1 Sachet of Sazón Seasoning with Achiote
  • 2 TBSP. Sofrito (homemade or store bought)
  • 1 8oz. Can Tomato Sauce
  • 1/2 Cup Water
  • Salt and Pepper to taste

Directions

  • Place the oil and the sofrito in a pan and cook for about 3 minutes.
  • Add the garlic and cook for a further 2 minutes
  • Add the tomato sauce, sazón sachet, water, cubed potatoes and simmer for about 5 minutes
  • Add the corned beef, mix to incorporate it and simmer for 20 – 25 minutes
  • Check to make sure the potatoes are cooked.
  • Check the seasoning and add salt and pepper if required

Typically the corned beef is served with white rice, but it would also work great with mashed potato and even pasta.

Note: I have seen several recipes that use cooked french fries instead of cubed potatoes, so you might like to give that a try, Add the fries near the end of the cooking time.
