Puerto Rican Rice and Beans (Arroz y Habichuelas) are a must try when in Puerto Rico and super easy to make at home.
What you will need:
- Olive Oil
- 1/2 cup Ham (Cocina Jamon), chopped into small cubes
- 2 Garlic Cloves, minced or chpped fine
- 2 tablespoons Sofrito sauce
- 2 tablespoons Recaito
- 1 (15 oz) can Pink Beans (or use Habichuelas Colorado – red Kidney Beans)
- 1 cup Water
- 1/4 cup Tomato Sauce
- 1 envelopegoya Sazon con Culantro y Achiote
- 1/4 teaspoon Oregano
- Ssmall Potato, peeled and cut into chunks (optional)
- Small amount of chopped Pumpkin (same size as potatoe) (optional)
- Salt and Pepper to taste
- Cooked White Rice
Directions:
- Heat the oil in saucepan on medium
- Add the ham and sauté for about 5 minutes until it starts to brown
- Add the Sofrito, Recaito and garlic and cook for another 5 minutes
- Add the beans, water, tomato sauce, sazon, potato and pumpkin and stir
- Bring to a boil and then reduce the heat to a simmer
- Cover the pot and cook for 30 minutes or until the potatoes are cooked and the beans and sauce have thickened
- Serve with hot rice
