Rare 125 Refreshes Their Menu for Summer

Rare 125 Summer menuXavier Toro, executive chef of Rare 125, announced a refreshed menu that brings new flavors and dishes as well as long standing diners favorites. The Cocktail menu is also new to go hand in hand with the new menu,

“The renewal of our food and cocktail menus has become an established practice in our restaurant. We always keep the favorite dishes of the public, and those dishes and cocktails that distinguish us, such as steak with pepper, pork belly or scallops; but we also seek to offer our guests innovative offerings that tempt them to experience different flavors, “explained Toro.

Although Rare 125 is characterized by its meats, it has expanded its menu to offer fish and seafood to please diners. One of the new dishes that is distinguished in this category is an appetizer, la causa de escabeche de pulpo español, and as a main course, the Pan Seared Faroe Island Salmon Filet.

Another new offer, in the meat department, is a Filet Mignon Wellington, cooked with the sous-vide method. Among the new cuts are the Pound and Half Pound Prime Rib Eye Steak, the USA Colorado Lamb Chops and the Apple Braised Korobuta Pork Shank.

The menu also offers diners suggestions as to which wine pairs best with the dishes. Many of the recommended wines belong to the Torres Winery, one of the chef’s favorite wineries. The restaurant also has an extensive wine list from various regions that caters for every budget.

Mixologist Kristen Rivera took inspiration from some recent trips and the weather in Puerto Rico to create the new cocktail menu, New cocktails include An Old Irish Night, which is similar to an Irish Coffee made with rum or the Piña pa ‘las Niñas that contains tequila, pineapple and sparkling wine. Traditional Old Fashioneds with non-traditional flavors, such as bacon or popcorn, are also included.

According to Kristen, “we want to offer our customers drinks that are not only delicious but also different and fun.” And to help clients make the task of selecting drinks more easily, they have
designed a menu that contains icons that identify the drinks according to the style, be it fun, spicy, sweet, citrus, refreshing and ‘spirit forward’.

Rare 125 also caters for diners who prefer non alcoholic beverages with several mocktails among which are Flower Power, Verde Luz and Yellow Passion.
